You’ll notice that this dish is pretty simple. It doesn’t include a lot of vegetables and it’s made for the most part with just meat. However, I think ribs as a whole are important. The bones help with holding the meat together and the ribs provide a thick, fibrous surface in which to hold that meat.

They’re actually really good. And this is why they are so prevalent in the South. Because when you walk into a barbecue joint, its like walking into a fast food or an old fashioned. It’s a combination of the high quality of the meat, the ambiance, and the fast pace of the waiters. The thing is, in a barbecue joint that has ribs, you can feel like you’re at a barbecue joint right before a hurricane hits.
