The Intermediate Guide to animal macarons

The animal macarons we made this year were very different than those we made last year but they were still my favorite. They are a little more complicated, a little more time intensive, and a bit more involved than regular macarons. The macarons we made this year are in the shape of a dog, a cat, and a bunny, but the theme is “dog, cat, and mouse”.

Each macaron is about 4.5 inches long and about 1.5 inches wide. To make them, we use a mixture of food coloring and melted food-grade chocolate. It takes about 6 hours to make a 5-inch macaron, and about 24 hours to make a 6-inch one. The color they are made with is a combination of red and yellow, but the colors that appear on the macarons are not actually food color.
